We need 1 1/2 Pounds <b>Flank steak</b>. Select a 1/2 inch think flank or top round steak. trim away all fat then partially freeze until firm. Slice across the grain in a 1/4 to 1/2 inch wide strips. Place meat strips in a shallow dish or heavy plastic bag. Add soy or terriyaki sauce to cover meat. If desired onion or garlic powder or Worcestershire sauce may be added. Toss to coat each piece. Cover and refrigerate several hours or over night. Lift meat from marinade, drain will then air dry for a couple of hours. Arrange meat strips in single layer on fine wire screen or cake cooling rack. Place in low temp. oven (175 to 200 degrees) or slowly smoke-cook in smoker until meat is completely dried. Store in air-tight container. Serve as a snack or <b>appetizer</b>.<br />

Makes about 35 pinwheels.<br /></font>hasinamahttp://www.blogger.com/profile/04263985557420170663noreply@blogger.com0tag:blogger.com,1999:blog-1323836348823905774.post-31146033433092613882007-12-25T21:38:00.000-08:002008-08-25T22:00:23.624-07:00Whole Wheat Pita Chips With Garbanzo BeanBoth the dip and the pita chips can be made several days ahead to keep on hand for after-workout nourishment. <br /><br /><strong>INGREDIENTS:</strong><br /><br />We need the following ingredients to prepare <span style="font-weight:bold;">wheat pita chips</span>.<br /><br />2 whole wheat pita bread rounds <br />2 teaspoons ground cumin <br />1 15-ounce can garbanzo beans (chickpeas), drained, liquid reserved <br />2 tablespoons fresh lemon juice <br />1 tablespoon extra-virgin olive oil <br />1 small garlic clove, peeled <br /><br /><strong>PROCESS:</strong><br />Preheat oven to 350°F. <br />Cut each whole wheat pita bread round horizontally along folded edges, forming 4 rounds total. <br />Stack pita rounds on work surface; cut stack into 8 wedges, forming 32 wedges total. <br />Place pita wedges in single layer on baking sheet. <br />Bake until wedges are crisp and golden, about 10 minutes. <br />Cool completely. <br />Stir cumin in small dry skillet over medium-low heat until fragrant, about 30 seconds. <br />Remove from heat. <br />Combine garbanzo beans, 3 tablespoons reserved garbanzo bean liquid, lemon juice, oil, garlic, and cumin in processor. <br />Puree until smooth, adding more garbanzo bean liquid by tablespoonfuls for desired consistency. <br />Season to taste with salt and pepper. <br />Transfer dip to bowl. (Pita chips and dip can be prepared 4 days ahead. Store chips in resealable plastic bag at room temperature. Stir in the mushrooms, bean sprouts, currants, and almonds and saute, stirring for 1 minute. Dissolve the cornstarch in 2 T water, and combine with sherry, soy sauce, and ginger; add to the pork mixture and bring to a boil, stirring. <br />Remove from heat and cool. Stack the egg roll wrappers and cut in half to form rectangles. <br />Forming one roll at a time, place a heaping a teaspoonful of pork mixture on one end of rectangle, moisten the long edges, and roll up. Press the edges together to seal. Egg roll may be prepared to this point, then refrigerated for several hours or overnight or frozen for several days before frying. <br />Adjust time for browning. If rolls are frozen, let them thaw before cooking. Heat the oil to 375 degrees F. and fry the egg rolls, 4 or 5 at a time, until golden brown and crisp on all sides. Frying will take about 4 to 5 minutes; turn rolls once. Drain on paper towels and keep warm while frying the remaining rolls. <br />Serve with warm Ginger Apricot Sauce. <br /><br />GINGER APRICOT SAUCE:<br />Combine the apricots, sugar, ginger, and salt with 3/4 cup water in a small saucepan and bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes. Pour the mixture into a blender container or food processor. Add lemon juice, cover and process until smooth. De-vein shrimp by removing black spinal cord. Cut each green onion in 4 daisies. Put shrimp, green onions, bell pepper and olives in a bowl. Mix garlic, lemon juice, olive oil, sugar, mustard and horseradish. Pour over shrimp mixture, cover and marinate at least 2 hours, stirring occasionally. Remove ingredients from marinade and thread equally on 8 wooden picks.
